Cornbread Cake

My Fav' Recipe for Cornbread is out of a Fanny farmer book my mother has....

Here's what I have used over the years in my head now, I won't make just any corn
bread... As the siblings would always say about plain ol'stuff. Dryyyy cornnn *hack hack hack*
breaaaadddd *hack hack* hank the *hack hack* cowboy won't *hack* even eat this *hack hack hack* "rolling eyes back like they are dying.....

Here my version..

This is made in a cast iron skillet.
Heat your oven, melt your bacon drippings (1 -2 tab) in your oven at the temp (375 or so)

Mix
2 cups corn meal
1 cup plain flour
2 TBS sugar (I make it sweeter sometimes just depends)
2 tsp baking powder
1 tsp salt

Mix in another bowl
1 TBS cooking oil
1 egg
1 1/2 cup milk

Combine both, mix, and pour into the hot pan from oven.
Bake for about 30 mins or so. Share
