What to do...

I am heading out of town next week for a week to see my newborn nephew and I am wondering what I should do for food for my hubby. YES, he is VERY capable of getting his own food but I am wanting to cook a few things and have meals ready for him so he dosnt have to eat fast food. But I am at a loss to of what to do. I would rather not freeze things but just use fridge as he's not crazy how frozen foods heat up when reheating.
What have you done for preparing to be gone for awhile? What works for you?

I make up containers and stick them in the freezer, just in case I forget to pack dh lunch, he can just quickly pull on out and stick it in his lunch bag. Maybe you can do something like this.

You can make up a batch of chili and freeze as individual servings. He can use the chili to make enchiladas as he wants them. If you also include rice and beans, that makes a complete meal. He can also use the chili for frito pie, as is, or over a baked potato for some variety.
Any meals you make between now and then, you can make a little extra to put aside for him in the freezer. Also, since it's next week, a lot will stay fresh just in the fridge and save him even more time.

Whenever I have tried to cook ahead for my husband, he rarely eats it...something about having to get it out of the freezer and warm it up, I don't know.

But, what I would do is THIS week, as you are cooking, make a little bit extra and then freeze it in single serving portions, labeled "Monday", "Tuesday" etc...make it as easy for him as possible. That way, he doesn't have to eat one thing all week long - like he would have to do with chili or spaghetti.

How about making a big pot of chili, soup, stew, spaghetti and meatballs, sloppy joes, taco meat, (not all of this justs some) and keep them in the fridge in individual containers. All of those things should last at least 5 days. I am sure on the last few days he can make a sandwich or get a burger.
You could also cut up fruit and veggies and have them in containers for easy access.

I think Karen has a good point about the thought that goes into pulling stuff from the freezer. If he's like my husband, when he's hungry, he's hungry. I think I would prepare a list of easy-fix meals and have all the good waiting in the frig and pantry. For ex: sandwich fixin's, potato salad, burrito stuff, pasta and sauce. You could prepare a big salad if he likes that. Just have it all there, and write a good list -- with lots of x's and o's, too.

I know you mentioned that your hubby doesn't like re heated freezer dinners, (and frankly, who wants to eat "leftovers" every night!) but what about prepped dinner. Hy hubby hates OAMC to, but I found a method of freezer dinners that allow you to just put together all of the ingredients then freeze it, uncooked. Then when you are ready for it, just stick the freezer pack in the fridge in the morning or the night before, and you have a great dinner ready when you are.

A few months ago I had to go to attend to my Grandmother who was suffering cancer. I was gone for a week and a half. My freezer was fully stocked with these dinners, and my hjubby couldn't be happier. It worked out great for us.

I agree, I'd leave some portions of food in the fridge. I would also get in some easy to cook food - maybe a frozen pizza or some stuff for sandwiches.
