It's whats for Dinner

Chicken and Sausage Gumbo over Rice is one of my Husbands favorite meals. :-)

So thats whats for dinner tonight!



Chicken and Sausage Gumbo

Cut up a whole length of sausage and cook in pot
for a few mins in a little olive oil till nice and brown.
This brings out the oils in the sausage that makes it
taste MUCH better than just cooking it in the soup!
After sausage is cooked add in 2 cans of Chicken broth,
2 cups water, 2 chicken breasts, salt and pepper, garlic
powder, and a bit of parsley.
Cook for a few hours on low. I usually cook it all day because
the longer you cook the more flavor! Before serving make
it thick by adding a little cornstarch w/water mix. Serve over
cooked rice and eat with Cornbread! So GOOD!



Cornbread
(Takin from my Fannie Farmer Baking Book)
Turn oven on 425 and put small amount of oil in cast iron pan and stick in oven to preheat.

Mix:
1 cup Flour
3/4 cup Yellow Cornmeal
1 1/2 tsp Baking Powder
1 tsp Salt

In another bowl mix:
1 cup Milk
2 Eggs
1/3 cup Honey
4 tbsp Melted Butter

Mix both dry and wet together.

Pour into Hot cast iron pan.
Cook for 20 mins. Share
