Whole Wheat Sweet Potato Muffins


Makes 3 1/2 dozen muffins
Ingredients:
2 sweet potato's
3 cups whole wheat flour
1 cup white flour
1/2 cup whole wheat bran
1/4 cup wheat germ
2 ts baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground cloves
1 cup apple sauce (I used my homemade applesauce but store bought will be fine)
4 eggs
2 teaspoon vanilla extract
2 cup honey
12 oz evaporated milk

Directions:
Preheat an oven to 400 degrees.
Prick sweet potato several times with a fork and place onto a baking sheet.
Bake the sweet potato in the preheated oven until easily pierced with a fork, about 40 minutes.
When the potato is cool enough to handle, peel and mash

Grease muffin cups, or line with paper muffin liners; set aside.
Reduce the oven temperature to 350 degrees.

Whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

Mix apple sauce, eggs, vanilla, honey, evporated milk, and mashed sweet potato.

Mix dry and wet together just until all ingredients are moistened.

Spoon batter evenly into prepared muffin cups.

Bake muffins in the preheated oven until golden and the tops spring back when lightly pressed, 15 to 20 minutes.

They were AWESOME! I think hubs has eating 4-5 already in the time he has gotten home! :-D LOL
They turned out sooo good! I could eat a few but will refrain from doing so unlike hubs.. hehe :-D
