Recipe for Gluten Free Sandwhich bread










Makes 2 loaves

Ingredients:
2 1/2 cups warm water
4 tbsp yeast
4 tbsp sugar
2 eggs
1/2 cup sugar
4 tbsp oil
2 tsp salt
3 cups Brown Rice FLour
3 cups Tapicoa Flour
1 tbsp Xanthan Gum

Directions:
Combine warm water with yeast and sugar. Mix well and allow to rest for 5 mins or until proofs.
Pour yeast mixture into bowl of stand mixer and add eggs, sugar, oil and salt. Mix until smooth.

In seperate bowl combine Brown Rice flour, Tapicoa Flour, and Xxanthan Gum, mix well.
With mixer on stir begin to add the flour to the wet mixture. Once all the flour has been added, turn mixer on HIGH and beat for 3 1/2 mins. (Very important to beat to get air into the bread.)

Grease 2 loafs pans. Pour dough evenly into pans and smooth top of dough with spatula. Cover and let rise for 20 mins. Preheat oven to 400 degrees. Bake for 10 mins uncovered and then cover with foil and bake for 30 more mins.

Enjoy!

To freeze bread slice and store in ziplock bag. Take out and toast bread for best result! Share
