New Gluten Free Bread Recipe!

I found another recipe for GF bread I wanted to try out, I found it off this site but changed it just a tad as I only had reg potato starch. ( And I can't WAIT to try that recipe for Dinner Crepes! Sounds so nummy!)

GF Bread
Makes 2 loaves

Mix up the following in a bowl:
2 cups GF brown rice flour
1 cup sweet rice flour
1 1/3 cup potato starch
2/3 cup tapioca starch + 4 tablespoons tapioca startch
5 teaspoons xanthan Gum
Mix up in Heavy duty mixer the following and let proof for a few mins:
5 tablespoons sugar
5 teaspoons yeast

2 cup warm water
Once yeast proofs add the rest of these items to your yeast:
1 1/2  teaspoon salt
4 large to extra large eggs
2 teaspoon rice or Heinz distilled white vinegar (corn based)
6 tablespoons oil

Mix in the dry ingredients with your electric mixer. Scrap the edges every so often. Mix for about five minutes on High. Place into 2 sprayed, oiled or greased non-stick 9 x 5 inch loaf pan. Shape slightly with a rubber spatula. Let rise for 35-45 minutes.
Bake in a preheated 375˚ F oven for 20 minutes. Cover with aluminum foil. Bake for 20 minutes more.

Eat fresh but after one day slice and freeze for later. GF bread tends to be crumbly so this helps with stopping that! Share
