Making a few things for the freezer!

Gluten Free Bread - 4 Loaves Sliced and frozen

Gluten Free Flour Tortillas

Recipe for Gluten Free Sandwhich bread










Makes 2 loaves

Ingredients:
2 1/2 cups warm water
4 tbsp yeast
4 tbsp sugar
2 eggs
1/2 cup sugar
4 tbsp oil
2 tsp salt
3 cups Brown Rice FLour
3 cups Tapicoa Flour
1 tbsp Xanthan Gum

Directions:
Combine warm water with yeast and sugar. Mix well and allow to rest for 5 mins or until proofs.
Pour yeast mixture into bowl of stand mixer and add eggs, sugar, oil and salt. Mix until smooth.

In seperate bowl combine Brown Rice flour, Tapicoa Flour, and Xxanthan Gum, mix well.
With mixer on stir begin to add the flour to the wet mixture. Once all the flour has been added, turn mixer on HIGH and beat for 3 1/2 mins. (Very important to beat to get air into the bread.)

Grease 2 loafs pans. Pour dough evenly into pans and smooth top of dough with spatula. Cover and let rise for 20 mins. Preheat oven to 400 degrees. Bake for 10 mins uncovered and then cover with foil and bake for 30 more mins.

Enjoy!

To freeze bread slice and store in ziplock bag. Take out and toast bread for best result! Share

Gluten Free CornBread

I think I have got this GF/CF cooking down a bit more! (After many many not so good meals with it for awhile!) I made this batch of cornbread tonight to go with some chili and it turned out quite good!
So here ya go!



G/F Cornbread


Mix:
1 cup milk or rice milk or soy milk or buttermilk or water
1 egg or 2 egg whites
¼ cup oil
¼ cup sugar

In a separate bowl, mix these dry ingredients with a wire whisk:
1 cup cornmeal
1 cup rice flour (brown or white or a combination of both)
2 teaspoons baking powder
1 teaspoon baking soda
¼ to ½ teaspoon xanthan gum
¼ to ½ teaspoon salt

Combine the wet and dry ingredients and mix gently but well for about one minute, then pour into a 8 or 9 square baking pan that has been sprayed or oiled. Bake at 400F for 25 minutes. Serve warm, directly from the pan, or let cool for 5 to 10 minutes. Share

1/2 way done

I would totaly not consider going outside to sit in the sun with only half of my body facing it due to a 1/2 of my body sun burn from sat (we had a yard sale).... Yah I guess I sat the wrong way most of the day...

To bad its raining out....

I'll just have to sit inside and sip a cuppa java and enjoy my hubbys day off work. Share

Did you say a Yard sale?

Here in South Texas, the weather turns nice every few days... and if that nice day happens to be a saturday than be sure you will find a yard sale or two already.

Well thats what this crazy gall and her sisnlaw did this saturday! Yup, we had a spur of the moment yard sale! And I must say we didn't do to bad for only a few hours of our time on a saturday morning! Love it!

My husbands office is now mostly cleared out of the items being stored in there, got rid of alot of stockpile items from shopping with coupons and I made some good money in the process.

Have you ever had a yard sale??? Oh how I love them!

So if you happen to see a crazy gal slamming on the breaks at the notice of a small little sign with an arrow on it on the side of the road... you just might think of me! :-D Share

Life with a crawler

A few Notes to self:
Please sweep floor more often so baby dosn't eat off floor.

Make sure when you leave the door open you expect to find your kid messing with whatever is in that room that is NOT kid proof.

When baby proofing get down on his level to see what he sees... like those cool computer cords.

He WILL wear you out! :-)



Oh yah it's fun, life with a crawler! I wasn't ready for it becuase it meant my baby is growing up faster than I would like but its fun!

How I love being a Mommy and enjoying these new phases in my little sweet guys life! Share

Have baby...

Lose a ton of weight right off... (ok maybe I cheated a bit becuase I had a VERY hard recovery and circumstances that made me lose alot more I think than the average woman after birth in the first few weeks)

Nurse baby alot to lose more weight... (j/k, it did come off, just not from nursing more on purpuse)

All baby weight gone...

A FEW other lbs gone...

Hit stand still...

Even though your STILL nursing...

Start working out to start losing weight...

Yups thats my story!

And I REALLY don't want that to be my next story... (well starting after the get married part, I've got a keeper!)

So I'm hoping to lose a few more lbs before more kids!

Oye!

Can I do it?

Running noses, sucker bulbs, and Mt. Laundry

Oh how I despise the little bulb they give you at the hospital....


But oh how it helps....

But when you have to hold your kid down, and hear them scream bloody murder when you even come CLOSE to them with it, to suck snot out of there nose so they can breathe it can be a moment of complete and utter dislike for that thing... and for snot of course....

If you haven't been able to tell you we have caught a cold and it has not been fun at all. I was pretty much miserable yesterday and had a baby who was feeling the same. Poor guy has had his nose cleaned, suckered, and wiped so many times its raw...

He slept pretty good once he went to bed last night. (The night before he was up all night so neither of us got much sleep.)

He woke up to eat around 6 am to eat and once he ate he threw up EVERYTHING all over me. I'm thinking his stomach was not feeling it with all the congestion so he got sick as he hasn't got sick again. But poor baby crashed on me once I got us cleaned up and slept till 8:30 or so.

He is now crashed out on the couch next to me, you can tell he's not feeling to great cause he just kinda feel asleep without me putting him down in his crib.

And since he's crashed out next to me I kinda can't move...so I sit here staring at this... dare I post it?
Anyone want to come fold laundry?

Hope we get over this soon!

Gonna go surf some recipes for our menu for the next 2 weeks...
