Meals to make before Baby is born...

Here's a list of food I am planning on making for my freezer before baby comes so when everything settles down after gracious people from church and family provide meals for us we will have plenty to eat without putting much effort into making food!

Baking Today

Today I am going to make a few meals while I am making dinner for the freezer for after baby is here!

I am making today:

2 Homemade Lasagna , 1 to freeze and 1 for dinner!
and
1 Pepperoni Lasagna to freeze

And possible a batch of applesauce will go on the stove from a whole bunch of very cheap apples I got at Super Target yesterday!


UPDATE:
Everything ready to put together!




And ready for freezer and oven!



Homemade Lasagna
(I doubled the recipe to make 2)

INGREDIENTS:
1 (16 ounce) package lasagna noodles
1/2 pound ground pork
1/2 pound lean ground beef
1 (8 ounce) can tomato sauce
1 (28 ounce) can crushed tomatoes
1 tablespoon chopped fresh parsley
1 clove garlic, crushed
1/2 teaspoon dried oregano
1/2 cup minced onion
1/8 teaspoon white sugar
1 1/2 teaspoons dried basil
1 1/2 teaspoons salt
Grated Parmesan cheese
1 pound shredded mozzarella cheese
2 cups chopped fresh spinach

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain and set aside.
Place pork and beef in pot and cook.
Stir in tomato sauce, crushed tomatoes, parsley, garlic, oregano, onion, sugar, basil and salt. Simmer over medium-low heat for 30 minutes, stirring occasionally.

In a oiled baking dish,
Place 2 layers of noodles on the bottom of dish;
Put small amount of cheese cheese and about 1/2 of the meat sauce;
Put layer of noodles on top of that;
Next layer will be a good amount of cheese, all of spinach, and some Parmesan cheese;
More noodles;
Last layer of meat sauce but save just a tad to put on top of last layer of noodles so they stay moist.
Noodles and little sauce.
Put a little cheese and grated Parmesan as a topping.

Cover with aluminum foil and freeze.
Goes straight from freezer to oven when ready!
Bake in preheated oven of 375 for 1 hour.
Remove foil and bake for another 5 to 10 minutes;
let stand for 10 minutes before cutting; serve.


Pepperoni Lasagna

UPDATE #2:

I peeled and cut up a whole large pot of apples.
Added in 3 cups or so of water.
2 cups of sugar
Boiled for 20 mins then left on low for awhile.

12 weeks left...

Seems like such a short time!


But we are in the last stretch of pregnancy and I'm excited about finally meeting this little guy!


And being in the 3rd trimester I am back to being dead tired all the time. I fall asleep at the random moments of laying down for a min and am out for hours. :-)


So here's a few things on my mind to get done in these last weeks before my energy completely runs out!!!



  • Get baby necessity after baby showers
  • Wash and organize all baby clothes
  • Make sure we have enough diapers (Hoping for another great sale!)
  • Make sure I have a few clothes that fit me after baby's birth! :-D Nursing and Reg!
  • Get car seats from friend, wash covers and get ready for both cars.
  • Finish baking things for freezer for fast and easy meals! (Doing some this week!)
  • Get birth plan finished and to doctor and hospital for nurses.
  • Set up Dr. for baby.
  • Finish cleaning out all rooms after yard sale in May. Have been storing stuff for a few months for this.

And many more things that just are not coming to my brain at the moment!

Easy Cheap Cleaner




You may find this weird, but I don't use your normal "cleaners" around my house... Yes I do when a flu or sickness comes around break out my Lysol wipes, but for normal everyday cleaning I use normal everyday stuff. Well, maybe not so normal, I use Basic H for my kitchen cleaning, windows, and that kind of stuff. But for harder not so easy grim I use Vinegar and baking soda. Yes, I do.


For several reason I use these odd things...


For one, It's CHEAP. Yes I can shop coupons and deals and get the normal on the shelf cleaning supplies but I was ALWAYS running out and having to add it to my list of things to work in my deals. I went in with my sisternlaw and we bought a gallon of Basic H cleaner and so far I have barely put a DENT in it! And I sure use that stuff to, not like I go easy on it.
So for the cost of what I put into that it has been WELL worth it. And baking soda and vinegar? Well I ALWAYS have those on hand for cooking so yah!

Another reason is that most cleaning agents out there are just so harsh I would rather not bring that in my home. Specially with a kid on the way I hear stories of kids downing all types of things and that alone makes me want to make sure I use safe cleaners!

And on top of it being harsh, I have horrible breathing problems that are from allergies (not so fun) and breathing in all those chemicals while cleaning a shower or such is just to much for me. It would always take me forever just because I couldn't breathe while I was in the room so I would have to leave it and come back! That alone tells me that it is NOT good.

So yes, in my cleaning of the bathrooms today I scrubbed my shower with a good applying of some baking soda and vinegar and with no effort at all it was sparking!

There are so many other types of ways to use vinegar in your house to clean for way cheaper than some of those costly items! Share

My short trip this week.

This week I have been home ALL WEEK except for a quick trip to the post office and a run in to both Walgreen's and Cvs while I was out. I have been under the weather and have been at home trying to recover from it all.

I'm glad I have been doing my major shopping ever other week so I was able to stay home all week without worrying about running out of things!

I did HAVE to go to the post office to mail some things yesterday that I had been putting off because of sickness and such so I decided to run into Walgreen's for SURE to get my free tote bags and take advantage of their 15%-20% off discount that day while I was out!

After sales, coupons, and discount of 15-20% = $30.51
Got back in RR or Gift Card a total of = $29.01
So I lost a total of $1.50 on my gift card
Not to bad considering I needed tissues, meds, and the such!

They sets from Gymboree and yes, original price on them is CRAZY! But I spent a fraction of the cost on them! And I did some research and plan on getting back ATLEAST 90% of the cost I paid or more from selling them on ebay once he grows out of them!

It's whats for Dinner



Farmhouse Chicken w/Red Potatoes and Greenbeans, Salad, and Fruit salad. Along with a cup of Fresh Juiced Lemon/Limeade! So good! (I made and extra Casserole to stick in the freezer for after baby comes!)




Farmhouse Chicken

Ingredients:
4 tbs butter
4 tbs flour
2 cup milk
2 chicken breasts, boiled and cubed
4 celery stalks chopped
1 small onion chopped
salt
pepper
12 ounce package of stuffing mix

Instructions:
Saute onion set aside.

Prepare stuffing mix according to package directions and set aside.

In a medium sauce pan, melt butter and then add flour. Stir until bubbly, then cook one minute. Slowly add in milk, stirring continually to avoid lumps. Add chicken, celery, onion, salt and pepper.
Cook and stir for 5-10 minutes.

Pour mixture into an 8x8-inch casserole dish. Top with stuffing.
Bake uncovered, at 350 degrees for 30-35 minutes.




Red Potatos w/ Green Beans

Clean and cut into 1-2 inch pieces about a dozen small red potatoes.
Boil till very tender.
Drain Potatoes and put back in pot with a small amount of olive oil.
Sprinkle in alittle parsley.
Brown for a few mins and add in 2 cans of drained greenbeans.
Cook for a few more mins and serve.

Thoughts on the mend.

It has been an eventful weekend/week and great/not so great lay of events that have taken place.


It started out Friday getting ready and packed to head out that afternoon to our church's Ladies Retreat.


I FELL down my front porch stairs in the rain....


Yes, I did. And yes it hurt. I went down on my back and landed hard. Got bruised and scrapped up but baby was fine and I just was sore for several days. :-) Oh and I busted my phone which was in my back pocket so I am phoneless... sigh.


Then on to the retreat later that afternoon. It poured on the way up and drizzled most of the afternoon while there but it was nice and refreshing. We had a wonderful time at the ladies retreat. It was refreshing for the soul. We had a guest speaker Beth Quinn who lead the topic of the weekend on Discernment. It was wonderful to be reminded to be more discerning in this life as a Christian. It was wonderful to fellowship with all the ladies or our church who are like minded and want to honor Christ in all we do. I am very thankful for where the Lord has placed me in this church. They push you to seek outside your comfort zone to strive for more thru Christ.


I while there developed a even WORSE case of allergies being up in the hill country and being outdoors for a good part of the weekend. And I can't seem to shake it off.


On top of that Monday morning I came down with a stomach bug throwing up and the such. Not cool at ALL being 27 weeks pregnant. I hate being sick but on top of being pregnant I keep feeling like I was going to pass out because either nothing stayed down or it felt like nothing would. It finally seemed to pass later in the evening and I started to feel alittle better. Now I am just battling with severe allergies that I wish would just go away and STAY away.

So yes, it has been an eventful weekend and week so far and this has barely started.



My plan is to take it easy today still and get my energy back. But who knows how much as I am getting into my 3rd trimester and I seem to be lacking in the "energy area"..... sigh. Share
