He loves it outside!

Every morning when I get up I open the front living room window and let the light shine in... it makes for a beautiful morning and give Joshua some sun and I think we both wake up better with it.. (That and a little java for mommy!)
Joshuas toys are on this wall where the window is so he has learned to climb on them to get to the window and see out! Its quite funny to watch as he has gotten good and getting where he wants to go and will do whatever it take to get there! :-D Such a boy!
So yesterday he pulled the teddy bear out of the Bumbo and got into the chair to see out the window. It was pretty funny when he started doign these moves in the chair that I was SURE he was gonna end up having some sort of mishap from... but no he has his balance down pretty good! I was amazed!

In the evening I leave the door open and let him watch out the glass door for daddy... He KNOWS daddy will be home soon when I do that! He will sit there and just watch outside for long stretches at a time! And if he sees the boys next door come outside to play and ride there bikes he gets SO excited! 

I can't wait for it to get a bit warmed to get a kiddy pool for him so we can spend time out in the yard! So fun! I'm sure hes gonna love it!

Don't close your eyes...

On the 25th my sweet little boy will be 8 months old! How it the WORLD did that already happen?????? It sure does not seem like 8 months has passed since he was born! Seems like yesterday!

I am loving being his mommy! He is such a sweet little guy and for the most part has a big o'l smile on his face!

He loves to eat! He eats "big boy" food 3 times a day now... And still nurses to! My little chunker! He likes most food also so that makes it easy to feed him. Not much of the "spitting out cuase it tastes gross" thing goes on with him! He sure loves veggies and french fries! He can't get enough! He is weighing about 21 1/2 lbs now! He's a tote to carry around! :-D

Once Joshua started crawling he's been everywhere and into everything he can get his hands on! He jumped right into pulling up on things the min he started crawling and now is crusing along on furniture to get where he wants to go. He lets go alot of the time to just stand there.... I am not quite ready for him to walk yet so I am hoping he puts that off for a few more months!

Oh and did I say I am loving that he sleeps 11-12 hours a night? Oh yes.... I love it! He goes down to bed around 8-9 depending on what has gone on that day and sleeps the whole night thru! Wakes up a hungry little man! I also figured out the key to get him to take his morning nap again after he had gotten off it for awhile when he got sick... Breakfast! :-D Uh silly mommy! I can't believe I didn't think about it untill a friend mentioned it... thanks girl! :-P

What else about my little guy.... 4 teeth now.. but no biting of mommy so thats good! LOL :-D 
Loves to wait for daddy to get home and play with him! He no longer wants mommy once daddy is home untill its time to eat. Which I'm ok with now becuase I know that my son is bonding big time with his daddy! And I love that!

Ah well, I think thats all for now... He's down for his afternoon nap so I must run and do a few things. Share

Why Can't I crawl?????????

Ok, so who dosn;'t grab their camera when something your kid does is just to funny to pass up!
Last week I was in the kitchen doing some stuff, when I heard my son making an odd racket in the other room. When I took a peak to see what was going on I couldnt HELP but grab my camera and take a video before I rescued him. of COURSE NOT!



Some how he had gotten himself in a blanket jam and couldnt crawl... it was to funny. Poor thing. Laughing at him and then taking a video of him is so mean! Share

Part 2 of Baking

Finished a very good late lunch of carne guisada and made a batch of these Flour Tortillas and here is the acctual recipe I used, had to change it up a bit for what I had on hand. But they turned out AWESOME!


So after lunch I made up another batch to put in the freezer.

Meanwhile I had made up another batch of bread and got it in the oven.

Cleaned up the kitchen for the day and played with this cute kid and his daddy!

Gluten Free Flour Tortillas

Gluten Free Flour Tortillas


1  cup white rice flour
1/2 cup potato starch flour
1/2 cup tapioca flour
1 tsp xanthan gum
1 tsp salt
1 tsp baking powder
1/4 cup olive oil
3/4 - 1 cup very hot water

1. Mix white rice flour, potato starch flour, tapioca flour, xanthan gum, salt, and baking powder in food processer.

2. Add olive oil and blend until crumbly.

3. Add 1/2 cup of very hot water and pulse a few times.

4. Gradually add more water, a few tablespoons at a time, until the mixture creates a ball.  I would be careful not to add too much water. You only want to add enough water to allow the mixture to come together into a dough that you can knead. Too much water and you'll have a gloppy mess.

5. Roll into a nice 2 inch log. Cut into 12 slices and cover with a damp towel and let sit until the skillet or griddle is hot.

6. Roll the dough onto a sheet of wax, make sure to use some gluten free white rice flour on the paper and on your rolling pin so it dosn't stick. Otherwise, the dough might stick to the rolling pin.


7. Place on hot skillet or griddle until bubbles appear and then flip over. Toast for a few more seconds.


Enjoy with some nummy mexican food!

These freeze well also. When they cool, lay them out on a large baking pan and slide into the freezer. After they're frozen, put them into a ziplock freezer bag. Share

Part 1 of Baking

My sweet little boy has been down for his nap and my sweet husband who has the day off doing some stuff around the house. Its been a nice day so far and I have been able to get some stuff done cooking/baking wise!

I started off making 5 pre-measured bags of all the flours that the recipe uses for 2 loaves each to make making bread faster and easier! I use this recipe here.

Then I filled up all my pantry containers with my flours becuase its easier then pulling it out of my huge gallon buckets when I need some!


I also made up a recipe of this flour mix that I use as 1 cup of it = 1 cup of reg flour when a normal recipe calls for regular flour. Its a pretty good all around flour mix.



Then I made up the first batch of 2 loaves of bread (which is in the oven at the moment) and started dinner.
Also here is a short video clip I made to show you how the dough is compaired to normal dough when making your bread. Just so you know your doing it right! :-)



Next off is to make Gluten Free Flour Tortillas  and eat some with our lunch of carnie guisada! Share

Flour mix

Wendy Wark’s Gluten-Free Flour Mix (Triple-size)


Ingredients:

6 ¾ cups Brown Rice Flour 2 ¼ cups Sweet Rice Flour

¾ cup Potato Starch Flour 1 cup Cornstarch

2 cups Tapioca Starch Flour 2 Tbsp Xanthan Gum

Directions:

Mix together well. Store in airtight container in refrigerator. Can be used cup for cup as a substitute for regular wheat flour. Share
